| Italian Beef Stir-Fry |

| INGREDIENTS |
|
1 pound HORMEL® ALWAYS TENDER® Beef Round Tip Steaks , cut thin (1/8 to 1/4 inch thick)
|
|
1 tablespoon olive oil
|
|
2 cloves garlic, crushed
|
|
1/2 teaspoon salt
|
|
1/4 teaspoon pepper
|
|
2 small zucchini, thinly sliced
|
|
1 cup halved cherry tomatoes
|
|
1/4 cup prepared reduced calorie Italian salad dressing
|
|
2 cups hot, cooked spaghetti
|
|
1 tablespoon shredded Parmesan cheese
|
|
|

| DIRECTIONS |
|
1. Cut beef steaks into 1-inch wide strips; cut each strip in half crosswise. Heat oil in large nonstick skillet over medium high heat. Add garlic; cook and stir 1 minute. Add beef strips; cook and stir 2 to 3 minutes or until no loner pink. Season with salt and pepper. Remove from skillet; keep warm.
2. Add zucchini to same skillet; cook and stir until crisp-tender, about 3 to 5 minutes. Return beef to skillet; add tomato halves and salad dressing. Heat thoroughly, stirring occasionally.
3. Serve beef mixture over hot cooked spaghetti; sprinkle with Parmesan cheese.
TIPS: 1 lb. beef strips for stir fry can be substituted for round tip steaks.
