| Lemon Garlic Pork Loin with Vegetables |

1 package HORMEL® ALWAYS TENDER® Lemon Garlic Flavored Pork Loin Filet
|
|
1 pound small Yukon gold potatoes
|
|
8 ounces peeled baby carrots
|
|
1/2 cup CARAPELLI® Extra Virgin Olive Oil, divided
|
|
2 cloves garlic, minced
|
|
1/2 teaspoon salt
|
|
1/4 teaspoon ground black pepper
|
|
|

| DIRECTIONS |
Preheat oven to 425°F. In a large bowl, toss together the potatoes
and carrots with 3 T. olive oil, garlic, salt and pepper. Place
vegetables into a large roasting pan. Roast uncovered for 20
minutes.
While vegetables are roasting slice pork filet into 1-1/2" thick slices.
Over medium high heat, brown both sides of pork slices in large
skillet in 1 T. olive oil (approximately 4 minutes per side). After the
vegetables have roasted for 20 minutes, reduce the oven
temperature to 350°F and add browned pork slices to roasting
pan. Cover pan and return to oven. Bake for 5 minutes or until
heated through. Remove from oven and serve.
SERVE WITH
Fresh or canned peach halves
topped with cottage cheese and
served on lettuce leaves. If using
fresh peaches, be sure to remove
the peach pit before serving.
