| Honey Dijon Pork Salad |

| INGREDIENTS |

1 HORMEL® ALWAYS TENDER® Honey Mustard Flavored Center Cut Pork Loin Filet
|
|
1 tablespoon CARAPELLI® Olive Oil
|
|
4 bibb lettuce leaves
|
|
1 bunch watercress, chopped
|
|
2 oranges, peeled and divided into segments
|
|
Honey Dijon Salad Dressing
|
|
1/4 cup pistachios, shelled and chopped (optional)
|
|
|

|
| DIRECTIONS |
Slice pork into thin strips about 2" long, 1/2" wide and 1/2" thick.
In heavy skillet or wok, heat 1 T. oil on high heat and add pork
strips. Stir-fry the pork strips until slightly browned and cooked
through (about 5 minutes). Place a paper towel on a dinner plate
and using a slotted spoon, carefully remove pork strips to the plate.
Divide lettuce, watercress and orange slices evenly and arrange
on individual serving plates. Arrange pork slices on greens.
Drizzle with dressing. Sprinkle with pistachios if desired.
SERVE WITH
warmed baguette rolls and
wedges of Monterey jack cheese.
