Roasting Timetable
Temperature: 165°-170°F. (medium-well)
Time: 23-25 minutes per pound
| Roasting Directions |
- Season roast with spices as desired.
- Place roast, fat side up, on a rack in an open roasting pan.
- Do not cover. Do not add water.
- Roast in a 325°F oven until internal temperature reaches 165°F (medium-well).
- Roast temperature will rise 5°F after removal from the oven.
