| Peppercorn Tenderloin with Pilaf |

| INGREDIENTS |

1 package HORMEL® ALWAYS TENDER® Peppercorn Flavored Pork Tenderloin (about 1 1/2 pounds)

2 tablespoons butter or margarine
|
|
1 cup chopped onion
|
|
3/4 cup diced carrot
|
|
1 1/2 cups long grain white rice
|
|
3 cups chicken broth
|
|
1/2 cup golden raisins
|
|
1/3 cup pine nuts, toasted
|
|
|

| DIRECTIONS |
|
Prepare tenderloin as directed on package. Meanwhile, in large saucepan, in butter, saute; onion and carrot until tender but not browned. Stir in rice and chicken broth. Bring mixture to a boil. Reduce heat, cover and simmer for 20 minutes or until rice is tender and liquid is absorbed. Stir in raisins and pine nuts. For serving, slice tenderloin and serve over pilaf.
