| Spa Salad with Citrus Vinaigrette |

| INGREDIENTS |

1/2 package HORMEL® ALWAYS TENDER® Peppercorn Flavored Pork Tenderloin (about 1 1/4 pounds)
|
|
1 cup fresh green beans diagonally sliced into 2-inch pieces
|
|
6 cups red and green leaf lettuce
|
|
1 large orange or clemantine peeled and sliced into sections
|
|
1 small cucumber seeded and cut into 2-inch julienne strips
|
|
1 large tomato diced
|
|
2 tablespoons CARAPELLI® Extra Virgin Olive Oil
|
|
1/2 cup orange juice
|
|
1 tablespoon honey
|
|
|

| DIRECTIONS |
|
Prepare tenderloin as directed on package. Meanwhile, in boiling water, blanch green beans until crisp-tender, about 2 minutes. Place green beans in ice water to stop cooking process; drain well and set aside. In small bowl, whisk together the olive oil, orange juice and honey; set aside. In large bowl, toss together the lettuce, green beans, orange slices, cucumber and tomato, To serve, slice tenderloin into 1/4-inch thick slices and place over salad greens. Drizzle with dressing and serve.
