| INGREDIENTS |

1/2 package HORMEL® ALWAYS TENDER® Peppercorn Flavored Pork Tenderloin (about 3/4 pound)
|

1 cup frozen whole kernel corn, thawed
|
|
1 jar diced pimentos (2-ounce)
|
|
2 tablespoons cider vinegar
|
|
2 tablespoons sugar
|
|
1 loaf (8-ounce) French bread, cut diagonally into 10 slices
|
|
CARAPELLI® Extra Virgin Olive Oil
|
|
3 garlic cloves, halved
|
|
fresh rosemary sprigs for garnish
|
|
|

| DIRECTIONS |
|
Prepare tenderloin as directed on package. In bowl, combine corn, pimentos, vinegar and sugar; set aside. Brush bread slices with a small amount of olive oil; brush with garlic. Toast bread slices until golden brown. Remove tenderloin from oven and let rest 5-10 minutes before slicing. Diagonally slice tenderloin into 1/4-inch thick slices. Top each slice of bread with 2 pieces of sliced tenderloin and corn relish. Garnish with fresh rosemary sprigs and serve immediately.
