| Teriyaki Chicken Stir-Fry |

| INGREDIENTS |

Vegetable Cooking Spray
|

1 package HORMEL® ALWAYS TENDER™ Teriyaki Chicken Breasts (17 oz) thinly sliced
|
|
2 tablespoons grated gingerroot
|
|
2 cloves garlic minced
|
|
1 tablespoon CARAPELLI® Light Olive Oil
|
|
2 cups broccoli florets
|
|
1 cup carrots cut in 2-inch julienne strips
|
|
1 cup red pepper cut in 1/2-inch cubes
|
|
1 cup pea pods
|
|
3 tablespoons water
|
|
2 tablespoons honey
|
|
2 tablespoons dry sherry
|
|
2 tablespoons soy sauce
|
|
Hot cooked rice
|
|

| DIRECTIONS |
|
In large skillet or wok, coated with cooking spray, cook chicken 3 to 4 minutes or until no longer pink; set aside. In skillet, cook gingerroot and garlic in oil 1 minute. Add broccoli, carrots, red pepper and pea pods. Stir-fry 2 minutes or until crisp-tender. In bowl, combine water, honey, sherry and soy sauce. Add to skillet. Cook 2 minutes. Add chicken. Heat thoroughly. Serve over rice. Serves 4.
